This chicken salad recipe is perfect with Hawaiian rolls! A winner with my husband anytime.
Ingredients
3 cups cooked chicken
3 stalks of celery
1/2 red onion
1 cup red grapes – cut in half
1/2 cup nuts – optional (almonds, cashews, pecans)
1/4 cup parsley or dill (optional)
1/2 cup plain greek yogurt
2 Tablespoons kewpie mayo (or regular mayo)
1/4 cup kefir
2 tsp mustard (dijon, or ground mustard)
1 tsp white, apple, or rice vinegar
1/2 tsp salt – or to taste
1/2 tsp pepper – or to taste
- Chop and mix all ingredients!
- Enjoy with your sourdough bread or Hawaiian rolls.
- Store in airtight container for up to 5 days, mix before using.
